The sweet story of “Filemata Kritis” began in 1985 when a young Cretan girl, Kaiti Roukounaki-Pisimisi, a restless and creative spirit by nature, decided to take her mother’s traditional recipe for xerotigana, and with great care and love turned it into the basic ingredient for a successful business. Her great love for Cretan tradition, in combination with the use of the purest ingredients and unprecedented skill, established her traditional hand-made xerotigana as the best on the Greek market, going beyond the Cretan boundaries and conquering the markets of Greece and now seeking to earn a place on the European market. In the same traditional way, along with the xerotigana, Kaiti created delicious Cretan patouda, home-made honey cookies, and diples.
